Hate sprouts? I used to as well. But now I know how to prepare Brussels sprouts properly they're one of my favourite veggies. Read on to find out how to clean, prepare and cook them so you can enjoy them at their best.

What are Brussels sprouts?
Brussels sprouts are a small green vegetable that is part of the cabbage family. The sprouts are actually edible buds and need to be removed from the stalks before cooking.
They originate from Europe but are just as popular in north America nowadays.
It is possible that the name comes from the fact that they were popular in Brussels, Belgium, in the 16th century.
Brussels or Brussel sprouts?
Always Brussels sprouts. Even if you're only referring to one of them, in which case you need to say Brussels sprout.
Do you have to cut a cross in Brussels sprouts before cooking?
No. Contrary to popular belief you do not need to cut a cross into your Brussels sprouts before cooking them.
This actually leads to them becoming waterlogged and therefore soggy.
Can you prepare Brussels sprouts in advance?
To enjoy them at their best Brussels sprouts should be prepared and cooked just before you want to eat them. However, if you're planning to eat them as part of a large meal, for example on Christmas Day, you may want to get ahead.
If this is the case you can trim and prepare your sprouts in advance. Store them in an airtight container in the fridge overnight. Don't leave them too long or the ends will turn brown.
Can you eat Brussels sprouts raw?
Yes, once you've prepared them, Brussels sprouts can be eaten raw as part of a salad.
I recommend shredding them finely if eating raw.
What can you add to Brussels sprouts to make them taste better?
Brussels sprouts can taste pretty good on their own if you cook them well. However, here are some ideas of things you might like to add to your sprouts:
- chestnuts
- cranberries
- garlic
- balsamic vinegar
- coconut
- vegan bacon pieces
- nutritional yeast
How to clean Brussels sprouts
Brussels sprouts often need a good clean before cooking, particularly if you have bought organic or grown your own.
To clean Brussels sprouts:
- first cut them off the stem
- peel off the larger, outer leaves
- place in a colander
- give them a good wash under the tap
- check for any remaining mud and cut off any damaged leaves.
Do you need to peel Brussels sprouts?
If your Brussels sprouts are very young you might not need to peel them. Usually however, it is a good idea to remove the outer leaves.
How to prepare Brussels sprouts
- Use a sharp knife to remove them from the stem if still attached.
- Trim off any tough or damaged outer leaves and the stalk end.
- Give your sprouts a good wash (see above).
- Cut in half if large.
- Proceed with the rest of your recipe.
How to cook Brussels sprouts
If you think you hate Brussels sprouts then it's highly likely that you've only ever eaten them boiled. When overcooked they look unappetising, smell like the school dinners of your nightmares and have a nasty, soggy texture.
With that said I recommend that you roast your Brussels sprouts!
If you do want to boil or steam your sprouts take care not to overdo it. Serving them immediately is a good idea too.
How to boil Brussels sprouts
- While you're preparing your Brussels sprouts bring a large pan of salted water to the boil.
- If your sprouts are large cut them in half.
- Once prepared carefully add them to the water and bring back to the boil.
- Reduce the heat to a simmer and cook for 5-8 minutes until just soft.
- Drain, season with salt and pepper and serve as soon as possible.
How to steam Brussels sprouts
- Once you've prepared your sprouts place them in a steamer basket.
- Place about an inch of boiling water in the pan and cover with the steamer basket and a lid.
- Cook for 5-8 minutes until just turning soft.
- Season with salt and pepper and serve as soon as possible.
How to roast Brussels sprouts
- Pre-heat your oven to 180°C (fan)/200°C/gas mark 6.
- Prepare your sprouts then place in a roasting tin.
- Drizzle over some olive oil and sea salt.
- Roast for 20 minutes, stir, then roast for a further 10 minutes until soft on the inside and turning crispy on the outside.
You can also fry or sauté sprouts. They are delicious in a stir fry or with coconut and other spices in a thoran.
