Kohlrabi is a bulb-shaped vegetable that's closely related to cabbage. Roasted kohlrabi is a simple and delicious side dish that goes well with many dishes.
I often get kohlrabi in my vegetable box. And while I am a huge fan of getting a veg box delivered every week I have to admit that kohlrabi is one of those vegetables that it can be hard to know what to do with.
On these occasions I often turn to my oven, because roasting vegetables almost always brings out their best.
A kohlrabi can be roasted in a single oven tray so it's a good one to make as part of a roast dinner or while the oven is on to cook other things.

This recipe is very simple to make. You will need the following ingredients:
- kohlrabi
- garlic
- olive oil
- salt and pepper
How to make roasted kohlrabi

Pre-heat the oven to 180°C (fan)/200°C/400°F/gas mark 6.
1. Place 2 tablespoons of olive oil in a mixing bowl with 2 cloves of crushed garlic and salt and pepper.
2. Mix until well combined.
3. Peel and chop your kohlrabi into bite-sized pieces. Place in an oven proof dish, drizzle with the olive oil mixture and mix well.
4. Roast for 20 minutes, stir, then return to the oven for a further 20 minutes.
5. Remove from the oven. When the kohlrabi has crispy edges and is soft in the centre it's ready to eat.

Equipment

Ingredients
- 1 kohlrabi
- 2 tablespoons olive oil
- 2 cloves garlic crushed
- Salt and pepper to taste
Instructions
- Pre-heat the oven to 180°C (fan)/200°C/400°F/gas mark 6.
- Mix together 2 tablespoons olive oil with 2 cloves crushed garlic and salt and pepper. Set aside.
- Peel and chop the kohlrabi. Place into a roasting tin and drizzle over the olive oil mixture. Stir well.
- Roast for 20 minutes, remove from the oven, stir well then return to the oven for a further 20 minutes.
- If the kohlrabi is crispy on the outside and soft in the centre it's cooked. If not return to the oven until it is.
