What is purple sprouting broccoli?
Purple sprouting broccoli is a vegetable that is part of the brassica family.
It is similar to broccoli. However, purple sprouting broccoli has a long stem and smaller head as well as lots of side shoots. Broccoli on the other hand has a large single head.
Purple sprouting broccoli is absolutely delicious and personally I prefer it to regular broccoli.
When is purple sprouting broccoli in season?
Purple sprouting broccoli is best eaten between February and April here in the UK.
If you grow your own you will often get a longer harvesting season.
Why roast purple sprouting broccoli?
Many vegetables taste best when roasted and broccoli is no exception.
Once you've tried roasting your broccoli - whether it's purple sprouting or regular - you won't look back.

Can you eat purple sprouting broccoli leaves?
Yes, the leaves on purple sprouting broccoli are edible.
Remove any old or wilted leaves.
Either leave the leaves on the stems or pull them off and give them a wash. If you've removed them from the stems they will cook quickly so allow the stems to cook for 10 minutes then add the leaves to the tray for the final five minutes.
Serving suggestions
Purple sprouting broccoli goes well with many dishes.
- Serve as a side dish with any meal that you'd normally enjoy with green veg.
- Mix with pasta and top with vegan parmesan-style cheese for any easy plant-based dinner.
- Serve with dips and salads for a healthy summer meal.
- Use sesame oil instead of olive oil and serve with rice or noodles and tofu.

Ingredients
To make this purple sprouting broccoli recipe you will need the following ingredients:
- 350g purple sprouting broccoli
- 1 tablespoon olive oil
- 2 cloves garlic
- ½ lemon
- Salt and pepper
How to roast purple sprouting broccoli
Preheat the oven to 180°C (fan)/200°C/gas mark 6/400°F.
1. Wash and trim the purple sprouting broccoli. Place in a bowl and add a tablespoon of olive oil and some salt and pepper. Mix well.
2. Place on a greased baking tray and roast for 10 minutes. Then remove from the oven, add 2 cloves of crushed or chopped garlic, mix again and return to the oven for five minutes or until the broccoli is crispy.
3. Transfer to a serving dish, squeeze over the juice of half a lemon and adjust seasoning if needed. Serve immediately.

Equipment
Ingredients
- 350 g purple sprouting broccoli
- 1 tablespoon olive oil
- 2 cloves garlic crushed or finely chopped
- ½ lemon juiced
- Salt and pepper
Instructions
- Preheat the oven to 180°C (fan)/200°C/400°F/gas mark 6.
- Wash the purple sprouting broccoli, trim the ends and pull off any excess leaves.
- Place in a mixing bowl and add a tablespoon of olive oil and season with salt and pepper.
- Place the broccoli on a greased baking tray. Roast for 10 minutes.
- Remove from oven and mix with 2 cloves crushed garlic.
- Return to the oven for five minutes or until the broccoli is soft in the centre and crispy on the outside.
- When cooked mix with lemon juice and add extra salt and pepper if needed.
