  • 70 g mint leaves removed from stems
  • 1 tablespoon sugar
  • 4 tablespoons hot water
  • 4 tablespoons white wine vinegar
  • Pinch salt


  • Finely chop 70g mint leaves and place in a bowl. Add 1 tablespoon sugar and stir.
  • Pour over the 4 tablespoons hot water.
  • Add 4 tablespoons white wine vinegar and a pinch of salt and stir.
  • Leave to cool then transfer to a glass jar and store in the fridge.
