Stir fried chard with chickpeas and tofu

Delicious stir fried chard with ginger, garlic and miso served with tofu and chickpeas. A delicious and healthy vegan-friendly meal. Serve with grains and other veggies for a complete meal.

Ingredients

  • 1 tablespoon sunflower oil
  • 200 g chard sliced, stems reserved and chopped
  • 1 inch piece ginger peeled and chopped
  • 2 cloves garlic peeled and chopped
  • 1 tablespoon white miso paste
  • 1 tablespoon soy sauce
  • 200 g smoked tofu chopped
  • 240 g tinned chickpeas drained weight, drained and rinsed

Instructions

  • Heat a tablespoon of sunflower oil in a large frying pan or wok.
  • Add the chopped ginger and garlic and stir fry for a minute, stirring often, until just starting to soften.
  • Add the chopped chard stalks and fry for a couple more minutes.
  • Put the sliced chard leaves into the pan and stir fry until starting to wilt.
  • Add a tablespoon of miso paste and a tablespoon of soy sauce and stir until well combined.
  • Finally add the tofu and the chickpeas and continue to cook until piping hot.
  • Serve with rice, other grains and/or a salad.
