Cut your avocados in half, remove the stone (the pit) and scoop out the flesh.
Place in a medium-sized mixing bowl and add the onion and the juice of one lime. Mash together until you have a consistency you like. Season with a little sea salt.
Taste and add more lime juice or salt if you like.
Stir through the chopped coriander leaves and the chipotle flakes (if using).
Serve immediately.
