Vegan guacamole with chipotle

Delicious and creamy vegan guacamole that goes perfectly with tacos and nachos and makes a brilliant party dip.

Ingredients

  • 2 large ripe avocados
  • 1 small onion finely chopped
  • 1 lime juiced
  • sea salt to taste
  • small handful fresh coriander finely chopped
  • 1 teaspoon chipotle flakes optional

Instructions

  • Cut your avocados in half, remove the stone (the pit) and scoop out the flesh. 
  • Place in a medium-sized mixing bowl and add the onion and the juice of one lime. Mash together until you have a consistency you like. Season with a little sea salt.
  • Taste and add more lime juice or salt if you like.
  • Stir through the chopped coriander leaves and the chipotle flakes (if using). 
  • Serve immediately.

Notes
