Baked Greek beans in tomato and dill sauce (vegan)

Delicious Greek-style beans, baked in a garlicky tomato sauce with plenty of dill and oregano. A delicious vegan side dish.

Ingredients

  • 480 g cooked butter beans two standard UK tins, drained and rinsed
  • 2 cloves garlic crushed
  • 1 red onion sliced
  • 800 g tinned chopped tomatoes
  • Small handful dill finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon oregano
  • Salt and pepper

Instructions

  • Pre-heat the oven to 180°C (fan)/200°C/gas mark 6.
  • Place all the ingredients together in a roasting tin and mix well.
  • Bake for 40 minutes stirring halfway until the onion is soft and the sauce has thickened.
  • Season with extra salt and pepper if required. Serve as part of a mezze spread or as a hearty vegan main course with a side salad and rice or potatoes.

Notes

  1. The serving of four is for a main course. If served as part of a mezze it will serve 6-8 people.
