Ingredients
480gcooked butter beanstwo standard UK tins, drained and rinsed
2clovesgarliccrushed
1red onionsliced
800gtinned chopped tomatoes
Smallhandful dillfinely chopped
2tablespoonsolive oil
1teaspoonoregano
Salt and pepper
Instructions
Pre-heat the oven to 180°C (fan)/200°C/gas mark 6.
Place all the ingredients together in a roasting tin and mix well.
Bake for 40 minutes stirring halfway until the onion is soft and the sauce has thickened.
Season with extra salt and pepper if required. Serve as part of a mezze spread or as a hearty vegan main course with a side salad and rice or potatoes.
Notes
The serving of four is for a main course. If served as part of a mezze it will serve 6-8 people.
