Celery and apple soup

Ingredients

  • 1 tablespoon olive oil
  • 300 g celery roughly chopped
  • 2 potatoes peeled and chopped
  • 1 apple peeled and chopped
  • 1 litre hot vegetable stock
  • 100 ml oat cream
  • Salt and pepper to taste

Instructions

  • Heat a tablespoon of olive oil in a large saucepan.
  • Add the chopped celery, stir well, and cook over a low-medium heat with the lid on the pan, for 5-10 minutes until softened.
  • Put the chopped potatoes and apple in the pan, stir well to mix with the celery and pour over a litre of vegetable stock.
  • Bring to the boil, then reduce to a simmer and cook for 10-15 minutes until the potatoes are soft.
  • Remove from the heat then allow to cool before blending with a stick blender or a jug blender.
  • Return to the pan and reheat, stirring through the oat cream.
  • Season to taste with salt and pepper and serve with crusty bread.
