Cucumber and radish salad

With a simple lemony dressing and chopped parsley and spring onions for flavour, this cucumber and radish salad is a great summer side dish.

Ingredients

  • 2 small cucumbers sliced
  • 1 bunch radishes sliced
  • 2 spring onions finely chopped
  • 30 g flat leaf parsley finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  • Place the sliced cucumber and radish on a serving dish.
  • Add the chopped spring onions and parsley.
  • In a small bowl mix together a tablespoon of olive oil and of lemon juice and season with salt and pepper.
  • Add the olive oil dressing to the cucumber and radish and mix well.
  • Serve immediately.
