Cucumber and radish salad
With a simple lemony dressing and chopped parsley and spring onions for flavour, this cucumber and radish salad is a great summer side dish.

- 2 small cucumbers sliced
- 1 bunch radishes sliced
- 2 spring onions finely chopped
- 30 g flat leaf parsley finely chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- salt and pepper to taste
Place the sliced cucumber and radish on a serving dish.
Add the chopped spring onions and parsley.
In a small bowl mix together a tablespoon of olive oil and of lemon juice and season with salt and pepper.
Add the olive oil dressing to the cucumber and radish and mix well.
Serve immediately.
