Courgette Stir Fry

Delicious served with rice or noodles, this courgette (zucchini) stir fry is a quick and easy dinner.

Ingredients

  • 1 tablespoon sesame oil
  • 1 onion chopped
  • 2 cloves garlic chopped
  • 1 inch piece of ginger peeled and chopped
  • 1 chilli chopped, optional
  • 2 large courgettes sliced into half moons
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds
  • 30 g cashews optional

Instructions

  • Prepare all of your vegetables before starting to cook this recipe.
  • Heat 1 tablespoon of sesame oil in a wok or large frying pan.
  • Add the chopped onion and stir fry for a few minutes until starting to soften and turn golden brown.
  • Add the chopped garlic, ginger and chilli and stir fry for a minute.
  • Mix in the sliced courgettes and stir fry for 4-5 minutes until turning golden.
  • Add a tablespoon of soy sauce and a tablespoon of sesame seeds. Stir to mix.
  • Toast 30g cashew nuts on a dry frying pan.
  • Serve the courgette stir fry with rice or noodles and sprinkle the toasted cashews over the top.
