This quick and easy courgette stir fry is ideal for a summer midweek meal.
It can be ready in just 10-15 minutes, longer if you decide to cook brown rice.
This recipe is also very easy to adapt and you can add in any other veggies that you like eg peppers, mushrooms, carrots.
Serve with rice or noodles.
What to do with a glut of courgettes
While available year-round in most grocers and supermarkets, courgettes (also known as zucchini) are at their best in the summer months.
And if you've grown your own then you may find yourself with a glut of courgettes - that is more courgettes than you know what to do with!

Ingredients
To make courgette (zucchini) stir fry you will need the following ingredients:
- 1 onion
- 2 cloves garlic
- 1 inch piece of ginger
- 1 red chilli, optional
- 2 large courgettes
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds
- 30g cashew nuts, optional
How to make courgette stir fry
1. Heat a tablespoon of sesame oil in a wok or large frying pan and stir fry the chopped onion for a few minutes until starting to soften.
2. Add the chopped garlic, ginger and green chilli and stir fry for a further minute.
3. Add the sliced courgettes and stir fry for 4-5 minutes, turning often, until soft and golden.
4. Add a tablespoon of soy sauce and a tablespoon of sesame seeds and stir through.
5. Lightly toast the cashews on a dry frying pan.
6. Serve the courgette stir with rice or noodles and sprinkle the toasted cashews over the top.

Ingredients
- 1 tablespoon sesame oil
- 1 onion chopped
- 2 cloves garlic chopped
- 1 inch piece of ginger peeled and chopped
- 1 chilli chopped, optional
- 2 large courgettes sliced into half moons
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds
- 30 g cashews optional
Instructions
- Prepare all of your vegetables before starting to cook this recipe.
- Heat 1 tablespoon of sesame oil in a wok or large frying pan.
- Add the chopped onion and stir fry for a few minutes until starting to soften and turn golden brown.
- Add the chopped garlic, ginger and chilli and stir fry for a minute.
- Mix in the sliced courgettes and stir fry for 4-5 minutes until turning golden.
- Add a tablespoon of soy sauce and a tablespoon of sesame seeds. Stir to mix.
- Toast 30g cashew nuts on a dry frying pan.
- Serve the courgette stir fry with rice or noodles and sprinkle the toasted cashews over the top.
