Easy vegan apple tarte tatin

Puff pastry, sticky caramel and sweet apples come together in this vegan tarte tatin to create a showstopper of a dessert that will impress everyone.

Vegan desserts can be fiddly and time consuming. This vegan tarte tatin is the exception to that rule.

Simply combine ready made puff pastry, caramel and sliced apples and you'll have a showstopper of a dessert that will look perfect on any dinner table.

What is tarte tatin?

Tarte tatin is a traditional French dessert made with pastry, apples and lots and lots of butter and sugar. The apples and caramel are placed in the baking dish first, then covered with a layer of pastry.

The tarte tatin is cooked upside down and then inverted once cooked so that the fruit appears on the top.

Shape of tarte tatin

Tarte tatin is usually made in a circular dish such as a pie or flan tin. I've made my version rectangular because I've used ready rolled puff pastry in order to make it really easy.

To avoid wasting any of the pastry I wanted to make my vegan tarte tatin the same shape as the pastry.

However, you could follow the same recipe and use a circular tin, just cutting off the excess pastry as you need to.

Alternatively you could buy unrolled pastry and roll it out in the shape of your dish.

How do you make tarte tatin vegan?

In terms of difficulty, converting a tarte tatin recipe to be suitable for vegans was pretty easy.

Butter is replaced with dairy free spread.

And I've used ready made puff pastry, which is almost always suitable for vegans. But as I always say - check the label if you're not sure as some is made with butter.

What other recipes can you make with vegan puff pastry?

Puff pastry is a really useful ingredient to have in the fridge if you're vegan.

Many vegan desserts are a bit fiddly, require lots of ingredients, or end up costing you a small fortune.

Sweet vegan puff pastry recipes

With a sheet of puff pastry however you can make loads of delicious recipes, such as this tarte tatin. Here are some more ideas

  • apple and mincemeat swirls
  • adapt this tarte tatin recipe by using a different fruit eg pears.
  • make a more classic apple vegan pie and leave the pastry on the top
  • apple turnovers

And that's just the sweet stuff.

Savoury vegan puff pastry recipes

There are lots of savoury vegan recipes that you can make with puff pastry too such as:

  • pizza pinwheels
  • cheese straws (use dairy free cheese)
  • pesto twists

Ingredients

To make vegan apple tarte tatin you will need the following ingredients:

  • 100 g brown sugar
  • 75 g dairy free spread
  • 6 apples
  • 1 teaspoon ground cinnamon
  • 375 g sheet of ready rolled puff pastry (check the ingredients)

Ingredients
 
 

  • 100 g brown sugar
  • 75 g dairy free spread
  • 6 apples
  • 1 teaspoon ground cinnamon
  • 375 g sheet of ready rolled puff pastry

Instructions
 

  • Pre-heat the oven to 180°C (fan)/200°C/gas mark 6.
  • Grease a 20 x 30cm roasting tin or baking tray with a deep lip and line with non stick baking paper. Set aside.

For the apples

  • Peel and core your apples and cut into thin slices.
  • In a medium saucepan melt 75g dairy free spread and 100g brown sugar together, stirring often.
  • Stir in a teaspoon of ground cinnamon and add the sliced apples.
  • Turn the heat to low and allow to cook for 5-10 minutes until the apples are just starting to soften.

To make the tart

  • Transfer the apple mixture to the prepared tin. Unroll the pastry and cover the apples with pastry tucking the sides in. Prick the pastry a few times with a fork.
  • Put the tart in the preheated oven and bake for 25 minutes or until the pastry is golden brown.
  • Take out of the oven and allow to cool in the tin for a few minutes.
  • Remove from the tin carefully by placing a tray or serving dish over the tin and inverting. If possible use one with a lip as some of the juices will run out otherwise.
  • Serve warm with vegan ice cream, cream or coconut yoghurt.
