Delicious stir fried chard with ginger, garlic and miso served with tofu and chickpeas. A delicious and healthy vegan-friendly meal. Serve with grains and other veggies for a complete meal.

Chard is a delicious, slightly bitter, leafy green vegetable that's abundant in vegetable bags and boxes for much of the year.

It comes in various varieties - the most common being Swiss chard which has vibrant green leaves and white stems.

Ruby and rainbow chard are also common and will add a glorious splash of colour to your meal.

Cooking chard

Although chard can be boiled or steamed I've always preferred to stir fry it.

This meal - stir fried chard with smoked tofu and chickpeas is a quick and easy vegan meal that's full of flavour and healthy to boot.

Add a portion of grains (I like quinoa) and some other veggies or a salad or dip for a healthy, flavoursome and nutritious vegan meal.

Ingredients

To make this recipe you will need:

  • 1 tablespoon sunflower oil
  • 200g chard (I used rhubarb chard for the photos)
  • 1 inch piece ginger
  • 2 cloves garlic
  • 1 tablespoon white miso paste
  • 1 tablespoon soy sauce
  • 200g smoked tofu
  • 240g tinned chickpeas, drained weight - 1 standard 400g tin

How to make stir fried chard with chickpeas and tofu

  1. Peel and chop the garlic and ginger. Separate the stalks from the chard leaves. Finely chop the stalks and shred the leaves.
  2. Heat a tablespoon of sunflower oil in a large frying pan or wok. Add the chopped ginger and garlic and stir fry for a minute, stirring often, until just starting to soften.

2. Add the chopped chard stalks and fry for a couple more minutes.

3. Put the sliced chard leaves into the pan and fry over a medium heat until starting to wilt.

4. Add a tablespoon of miso paste and a tablespoon of soy sauce and stir well.

5. Finally add the tofu and the chickpeas. Stir until well combined.

6. Mix well and continue cooking until the tofu and chickpeas are piping hot. Serve with rice, other grains and/or a salad.

Ingredients
 
 

  • 1 tablespoon sunflower oil
  • 200 g chard sliced, stems reserved and chopped
  • 1 inch piece ginger peeled and chopped
  • 2 cloves garlic peeled and chopped
  • 1 tablespoon white miso paste
  • 1 tablespoon soy sauce
  • 200 g smoked tofu chopped
  • 240 g tinned chickpeas drained weight, drained and rinsed

Instructions
 

  • Heat a tablespoon of sunflower oil in a large frying pan or wok.
  • Add the chopped ginger and garlic and stir fry for a minute, stirring often, until just starting to soften.
  • Add the chopped chard stalks and fry for a couple more minutes.
  • Put the sliced chard leaves into the pan and stir fry until starting to wilt.
  • Add a tablespoon of miso paste and a tablespoon of soy sauce and stir until well combined.
  • Finally add the tofu and the chickpeas and continue to cook until piping hot.
  • Serve with rice, other grains and/or a salad.
