These deliciously crispy roasted cauliflower leaves are easy to make and are a great way to avoid food waste. A delicious vegetable side dish.

Roasted cauliflower leaves are not only a great way to avoid food waste, they're absolutely delicious.

Quick and easy to make, they're a delicious side dish that can be served alongside cauliflower florets or separately.

I love their taste and often snack on them while the rest of the meal is cooking.

Is it safe to eat cauliflower leaves?

Yes. As well as cauliflower florets you can eat both the delicate inner leaves and the larger outer ones, the centres of which are sometimes called ribs.

Cauliflower leaves are both safe to eat and delicious, especially when roasted.

How to use cauliflower leaves

This recipe is for roasted cauliflower leaves. However you can also use them in the following ways:

  • add to vegetable stock
  • chop up and stir fry
  • add to roasted cauliflower for the last 5-10 minutes of cooking time
  • add to cauliflower soup

What to serve with cauliflower leaves

Cauliflower leaves make a delicious savoury snack, a little bit like kale crisps.

They're also a great vegetable side dish for any occasion when you'd serve a side of greens.

  • the leaves of a cauliflower
  • a tablespoon olive oil
  • salt and pepper.

1. Cut the cauliflower leaves into strips. Drizzle over some olive oil, salt and pepper and mix well.

2. Roast in a preheated oven (180°C (fan)/200°C/gas mark 6) for 20-30 minutes, turning once or twice, until turning crisp.

Roasted Cauliflower Leaves

Ingredients
  

  • Leaves from 1 cauliflower
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 180°C(fan)/200°C/gas mark 6/400°F.
  • Remove the leaves from your cauliflower. Wash and cut into strips.
  • Place in a roasting tin and drizzle with olive oil. Season with salt and pepper.
  • Roast in the oven for 20-30 minutes, turning once or twice, until turning golden and crispy.
