Oh, how delicious! This is such a fantastic group of vegan dinners for Veganuary - thank you so much for sharing! I'm thinking of making either the jackfruit tacos or the spicy peanut butter noodles for dinner, they both sound absolutely divine.

Ooh, how wonderful, everything looks so delicious. You're right too, there's just so much variety with vegan food. I never have a problem as to what to eat for dinner, though I thought I'd struggle with breakfast and lunch. Not yet though 😀
