Here in the United Kingdom we're never quite sure what the weather is going to do in summer and that's just as true in the summer as it is in the rest of the year.

However, as soon as there's a hint of sunshine we love to pack up a picnic and head out to the nearest grassy, sunny space for the rest of the day.

As a vegan, or if you're catering for vegans, it can however be tricky to know what to make for those al fresco occasions - beyond hummus, olives and strawberries of course!

But with a little thought and planning though you can have a colourful and delicious picnic spread that everyone will love.
