It doesn't get much better than this fresh and vibrant rainbow salad. Jam-packed full of nourishing ingredients, you truly will be eating the rainbow with this recipe.

I’m a big fan of a salad with lots of different vegetables.

I love a mixture of textures too. This rainbow salad is full of crunchy red cabbage paired with spinach leaves, grated carrots, coloured peppers, a little sweetcorn and some herbs.

Mixed with a simple lime-based salad dressing this salad is nourishing, tasty and satisfying.

It’s also easy to adapt, depending on which veggies you have in the house.

What other vegetables would work in this rainbow salad?

Other vegetables you could add include:

  • grated beetroot
  • cucumber
  • white cabbage
  • avocado
  • lettuce.

The dressing can be adapted too if you want.

Best dressing for rainbow salad

I’ve made a really simple dressing for this salad with just:

  • lime
  • olive oil
  • salt and pepper.

If you prefer you could use a lemon instead of the lime, or a tablespoon of apple cider vinegar.

A mustard dressing would work well too.

How difficult is this salad to make?

This salad is super easy!

It’s just a case of chopping or grating the ingredients and mixing everything together.

What to serve with rainbow salad

This salad is a meal in itself. However, if you want something more filling you could:

  • add a tin of chickpeas to the salad
  • serve with flatbreads, hummus, or tahini sauce
  • have it as a side with some veggie burgers - try chickpea burgers or these potato and quinoa burgers or falafels.

What ingredients do you need to make rainbow salad

To make the salad you will need:

  • ½ small red cabbage
  • Handful baby spinach leaves,
  • 2 grated carrots
  • A red, yellow or orange pepper
  • Handful cooked sweetcorn
  • Small bunch parsley or coriander

And for the dressing you’ll need:

  • 1 lime
  • 2 tbsp olive oil
  • Salt and pepper

Do you need any special equipment to make this?

No, none at all. As long as you have a sharp knife, a chopping board and a salad bowl you’re good to go.

Ingredients
 
 

  • ½ small red cabbage shredded
  • Handful baby spinach leaves shredded
  • 2 carrots grated
  • 1 red yellow or orange pepper, thinly sliced
  • Handful sweetcorn cooked
  • Small bunch parsley or coriander, finely chopped

To make the dressing

  • 1 lime squeezed
  • 2 tablespoons olive oil
  • Salt and pepper

Instructions
 

  • Finely shred half a red cabbage and a handful of baby spinach leaves.
  • Place in a large mixing bowl.
  • Grate two carrots (I used one orange and one yellow carrot) and add to the bowl.
  • Slice a pepper and add this along with a handful of cooked sweetcorn (tinned is fine). Finely chop a small bunch of parsley or coriander and add this as well.

To make the dressing

  • Make the dressing by squeezing a lime and mixing the juice with 2 tbsp olive oil and a little salt and pepper. Mix well with a fork.
  • Pour over the dressing and mix well with your hands or two spoons.
